To Serve
1. Prepare the Crust:
Mix the chocolate cookie crumbs with the melted butter until evenly combined.
Press firmly into the base and sides of a tart tin.
Chill in the fridge for at least 20 minutes to set.
2. Make the Filling:
Finely chop the dark chocolate and place in a heatproof bowl.
Heat the cream in a small saucepan until just below boiling.
Pour the hot cream over the chocolate, add the salt if using, and leave for 1 minute.
Stir gently until smooth and glossy.
3. Assemble the Tarte:
Pour the chocolate filling into the chilled crust and smooth the top.
Refrigerate for at least 2 hours, or until fully set.
4. Serve:
Slice and serve with a spoonful of crème fraîche and fresh raspberries.
